Chocolate Macadamia Coconut Clusters

As Valentine's Day approaches, a part of our family is on the second round of a sugar detox. They decided to stay on it because they were feeling so good. Maybe it's the time of year, but today I wanted to put together something that they would be able to enjoy and satisfy my want of all things chocolate. These are made with healthy fats from coconut oil, flakes and butter and are paired with raw cacao, which is full of antioxidants and also contains magnesium, an essential mineral that many are lacking. These took me about 5 minutes to prepare, but the hard part was waiting for them to set up in the freezer! These were approved by a critical panel consisting of a 9 and 13 year old. Make these for your favorite loved ones or the closest love you have-you!


Chocolate Macadamia Coconut Clusters

from the kitchen of Heather Page, Healthy Decadence 1/3 c. dry roasted salted macadamia nuts, chopped 1/3 c. coconut flakes, roughly chopped 1/2 t. Vanilla 1/4 c. coconut butter 2 T. Coconut oil 1 T. Raw cacao

Pinch of himalayan sea salt 1. Melt coconut oil and butter on low, then add remaining ingredients except for the salt, and mix.

2. Spoon into mini muffin cups and pour remaining liquid into each one.

3. Sprinkle with himalayan sea salt.

4. Place in freezer until hardened, about 15-20 minutes. Makes 10.
