Sausage and Brussels Sprouts One Pan Meal with Mashed Roasted Parsnips

It's Fall! My favorite time of the year. The kids are back to school, the evenings are cool, sweaters and boots, and fall meals such as soups, stews and casseroles. With all the activities in which my kids are participating, healthy one pan meals made from real food, are essential. I totally love to cook, but the cleanup. Ugh! So, a one pan meal makes life so much easier.

I stick to a more paleo type diet and love to substitute potatoes with parsnips. The taste is different and provides a different side dish. Paired with the Brussels Sprouts (green or purple), the flavors are balanced nicely.

I've used my favorite organic, grass-fed beef kielbasa I found at Costco, but any organic, sugar-free polish sausage type will work.

It's a pretty quick meal, too. The prep takes about 10 minutes and the cooking time is 35 minutes. And clean up is a snap!

Sausage and Brussels Sprouts One Pan Meal with Mashed Roasted Parsnips

Makes 3-4 servings


1 lb. organic grass-fed beef sausage (I used Kiolbasa brand), cut in 1/2" pieces

4 medium to large parsnips, peeled and cut into 1/2" pieces

1 lb. Brussels sprouts, trimmed and cut in half (I used purple sprouts, but green are great too!)

1 T. olive oil (for parsnips)

2 T. olive oil (for Brussels sprouts)

1/2 t. mineral salt

pinch of black pepper

1-2 T grass-fed butter, like Kerrygold

1/4 c. bone broth (optional)

1. Preheat oven to 375 degrees. Toss vegetables in olive oil. Sprinkle with salt.

2. Place prepped sausage and vegetables on stainless steel or parchment lined pan.

3. Cook for 20 minutes and flip sausages. Return to oven for 10 minutes.

4. Check parsnips for doneness. They should be soft. Remove from oven.

5. In separate bowl (I used the bowl I tossed the vegetables and olive oil in), add roasted parsnips and butter. Use a potato ricer to mash to preferred consistency. If you want smoother whipped parsnips, add broth and whip with hand mixer. Salt and pepper to taste.

6. Serve immediately and enjoy!
